Led by Michelin-starred chef Paulo Airaudo, the restaurant reimagines Italian culinary traditions through a personal vision rooted in research, seasonality, and deep respect for ingredients. The name Portale is an invitation to cross a threshold: between history and modernity, Florence and the world, memory and discovery.

Paulo Airaudo is the chef behind Portale’s culinary concept, defining its identity and vision. Born in Argentina to a family of Italian heritage, he is the chef and owner of Paulo Airaudo Group, headquartered in San Sebastián, Spain’s renowned gastronomic capital. Starting with his flagship restaurant, Amelia, he has built a restaurant group that today holds eight Michelin stars across eleven restaurants in Spain, Italy, Hong Kong, and Thailand.
With Portale by Paulo Airaudo, Airaudo brings his gastronomic vision to Florence, while entrusting the day-to-day leadership of the kitchen to Head Chef Mirko Margheri, a Tuscan chef whose professional journey includes some of Italy’s most acclaimed kitchens, as well as significant experience in Paris and London.
